

Wild pepper grows in the virgin forest, it is also called "Junglepepper"
Its name means fruit of the "Voatsiperiferytre" it is plant wich climbs up to 10 to 20 meters and is harvested by hand.
The seeds are smaller, elongated and have a small tail.
It is less sharp pepper but gives a sensation of warmth in the mouth, you will find notes of vanilla, smoke, wood, tarragon, anise with a touch of acidity, its aroma is unique.
It is excellent when it is ground fresh and goes very well with meat, fish, game, foie gras or shellfish.

In your sauces: Deposit the grains in the sauce, they will imbibe and rehydrate giving a more pink color.
Tip, to avoid having grains directly in your sauce, put them in a tea ball and infuse it directly in your sauce.
